This is the moisture running out of a Spanish oak tree felled in the forests of Galicia. It is destined to end up as the staves of a sherry cask but only after around two years of natural air drying - first in the north of Spain and then under the baking sun of Jerez in Andalucia. Once its moisture level has been reduced from around 70% to about 12% it can be used to create a sherry cask and ultimately to mature an SMWS whisky.
