I’ve been trying to think of easier ways to get some of my favorite recipes to you and I’ve decided let’s get back to basics, they’re going on the feed! might not be the prettiest pics, but they sure will taste good if you make it 🤤
First up, my large group enchiladas. The perfect meal to serve when you are having people over or going up north. or you could be like us and make them for Sunday dinner and then have the rest for lunches every day. you or your group will love.
Large Group Enchiladas (or the BEST meal prep for the week!)
Slow Cooker
• Add 4 chicken breasts
• Sprinkle 1 packet Siete spicy taco seasoning
• Add 1 can green chiles
• Add 1 can black beans, rinsed
• Add 1 bag frozen corn
• Pour in 1 can enchilada sauce (red or green – we love Siete)
• Mix and cook on HIGH for 3 to 4 hours
• Shred chicken and stir everything together
Assemble
• Preheat oven to 400°
• Spray a casserole dish with avocado spray
• Lightly coat the bottom with enchilada sauce (about 3/4 of the jar, not all)
• In the enchilada sauce jar, mix in 1/2 cup sour cream
• Fill 8” tortillas with the chicken mixture, roll, and place snugly in the dish
• Pour remaining enchilada sauce + sour cream mixture over the top
• Cover with mozzarella cheese
Bake
• Bake for about 25 minutes until cheese is lightly browned
