Spinach Lasagna: adapted from @dinneratthezoo
INGREDIENTS
For the filling:
16 oz frozen spinach, chopped
15 oz ricotta cheese
2 large eggs 🥚
3/4 cup Parmesan cheese, grated
1 cup mozzarella cheese, shredded
1/2 tsp salt plus more to taste 🧂
1/4 tsp pepper plus more to taste
1/2 tsp dried oregano
1/2 tsp garlic powder 🧄
For assembly:
1/4 cup olive oil
1 small onion, finely chopped 🧅
4 garlic cloves, thinly sliced 🧄
2 sprigs basil, chopped 🌿
2 28 oz cans crushed tomatoes 🍅
Kosher salt 🧂
Freshly ground pepper
1 box @eatbanza lasagna noodles [If using other noodles, bake time may vary]
2 cups mozzarella cheese, shredded
1 tbsp Parmesan cheese, grated
2 tbsp fresh parsley, chopped
1. Thaw frozen spinach at room temperature for at least 30 minutes.
2. Add spinach to a colander and let drain.
3. Place the spinach, ricotta, eggs, Parmesan, 1 cup mozzarella, salt, pepper, oregano, and garlic powder in a large bowl. Stir to combine.
4. Heat oil in a pot over medium heat.
5. Cook onion, stirring occasionally until very soft, 8-10 minutes.
6. Add garlic and cook, stirring occasionally until very soft, about 5 minutes. Stir in basil and tomatoes.
7. Season with salt and pepper and bring to a simmer.
8. Reduce heat; simmer gently, stirring occasionally, until sauce is thick, about 1 hour. Season with salt and pepper.
9. Preheat the oven to 375°F. Coat a 9"x13" pan with cooking spray or oil.
10. Spread a small amount of sauce on the bottom of the pan. Add a layer of noodles, then spread 1/3 of the cheese mixture over the noodles.
11. Top the cheese mixture with 1/3 of the marinara sauce.
12. Repeat the layers, ending with the marinara sauce.
13. Cover the lasagna, then bake for 30 minutes.
14. Uncover the lasagna, then add the remaining 2 cups of mozzarella cheese. Bake for an additional 15 minutes then broil on high for 1-2 minutes until cheese is melted and browned.
15. Sprinkle lasagna with parsley. Let stand for 5-10 minutes, then cut into slices and serve.
