Around a year ago, chef @edgardsanuy started becoming disillusioned with the restaurant industry. “All these public relations agencies in Hong Kong are so powerful, almost dictating what the media should write, like who is the best, who is the second best,” he says. “We’re forgetting a part of the industry where it’s people from different countries, where the only thing they have is their culinary heritage, recipes.” So, with his passion for photography, Sanuy started a project called “The 50 Forgotten”. The aim was to photograph 50 under-represented restaurants in Hong Kong, showcasing their food and the stories of the people behind the dishes.
