@matrfds, our young food tech company, the teamwork, and our accomplishments, was one of the highlights of my 2022. I am very proud that our first product, a patty made from oats, lupins, peas, potatoes and beets, exposed to a fungi-based fermentation, has now become a stable at the menu of @gasolinegrill. “Do you want your burger with meat or with MATR?”
Eight years before he founded Gasoline Grill in 2016, Klaus Wittrup helped me get our first bakery in Jægersborgade off the ground and literally laid the foundation for Nordhavn Vinegar factory. We worked together for 3 years. I loved Klaus as colleague and we became friends.
Our consumption of meat is expected to continue rising until at least 2050 and we are currently wasting food that could have fed 3 billion people. In our family we cook almost all our food from scratch, and we often wonder what a miracle it is that you can bring out such delicious flavours and textures from vegetables. For all kinds of reasons most people don’t, and it would be a fragile strategy to pin our hope for the future on the idea that most people are willing to give up meat for plants. Radical initiatives are needed, it’s not that we have plenty of time. This is why we have made an effort to find a way to turn locally sourced, and partly upcycled organic plants into new food product with the capacity to replace meat. Even in the eyes of someone like Klaus Wittrup😊
