Ingredients - 1 ½ cups sticky rice - 2 tbsp neutral oil, divided kk - ⅓ cup preserved mustard greens, chopped - 2 cloves garlic, minced - ½ tsp red chili flakes - ½ tsp granulated sugar - 1 tsp sweet soy sauce - 3 tbsp spicy preserved radish, chopped - 2 eggs, fried over easy - 1 stalk scallion, thinly sliced - 1 youtiao (Chinese doughnut), cut in half - ¼ cup pork floss Preparation 1. Rinse rice and soak for 6 hours or overnight. 2. Strain rice and transfer to a steamer basket lined with a damp cheesecloth or tea towel. Cover rice and steam for 45 minutes. 3. Meanwhile, heat 1 tbsp oil over medium heat and cook garlic until fragrant and slightly golden. Add mustard greens, chili flakes and sugar. Cool stirring constantly until mustard greens look dry. Add in soy sauce and cook for another minute. Set aside. 4. Heat remaining 1 tbsp oil in a medium pan over medium-high heat. Fry eggs over easy, transfer to a plate and set aside. 5. To assemble, dampen cutting board then lay a large piece of plastic wrap over top. Flatten out ½ of the rice over plastic wrap to form a rectangle. 6. Add an egg to the center of the rice, top with half of the scallions, youtiao, mustard greens, rashish, and pork floss. 7. Roll fan tuan into a burrito shape squeezing the ends together (like you would a sushi roll). Tightly tie the ends of the plastic wrap to help hold its shape. Rinse and repeat with remaining ingredients. Cut fan tuan in half and enjoy!
