We would like to introduce you to a little friend of ours called Pinot Blanc in our Something Different Series. The single vineyard for this wine is located in Naramata Village across the street from the Mariani Vineyard. Last year I wanted to try free run juice vs pressed juice to see if there were differences in the flavours, texture, and personality of the wine. This #pinotblanc we are releasing was made completely from free run juice over a six day period. Each day we would extract a bit more of the juice that naturally released from the grapes as they broke down with the help of some punch downs and foot stomping. We made this wine traditional method but also thought the flavours would be complimented with honey so we used half of our honey from the farm and half sugar with the champagne yeast for the second ferment in the bottle. The result = a very layered and complex wine with a crazy long finish. Loads of citrus and apple with great weight and a long honeycomb finish. We have been chilling the wine in the fridge as normal but once open, we let it warm up and have enjoyed exploring all the flavours that start to unravel in this beautiful glass of wine.
