Chilli Oil Roast Chicken - Another Day in Paradise This weekends chicken with some heat. Ingredients 1kg chicken , cut in half lengthways, season generously with salt and rest for at least 30 minutes 4 large baking potatoes - quartered, cleaned and parboiled Carrots , onion, and spinach Chilli Oil - use you’re favourite brand or make your own. I made mine by pouring hot oil over a mix of / chilli de Arbol, sichuan peppercorns, fennel seed, cumin, and black pepper. Once cooled, season with salt and sugar. Spread the chilli oil paste over the entire chicken on both sides, as well as under the skin. Roast over the parboiled potatoes/veg. 250c for 10 minutes then 185c for 45 minutes. On until an internal temp of 75c. Put the potato’s back in the oven at 500c for 10 minutes. I mixed through some fresh spinach and had it with mayo and lemon. #roastchicken #fyp #familymeal
