Cynthia Shanmugalingam’s (@cynthia.uma) Rambutan (@rambutan_ldn) , also the name of her debut cookbook, will open in Borough Market and pay homage to the innovations of diaspora cooking as much as ancient Sri Lankan tradition. The focus will be on Tamil cuisine: the region’s cooking, while a staple in Sri Lankan diaspora restaurants around London in Rayner’s Lane, Harrow, Wembley, Tooting, and East Ham, is yet to get the limelight in the newer crop of Sri Lankan restaurants in central London. Shanmugalingam knows it’s time to change that. But before that, she's partnering with Soft and Swirly (@soft_n_swirly) for a summer of Sri Lankan soft serve — previous flavours have included mango; coconut and toasted rice; and milo — from a hatch at the front of the restaurant-to-be.
