ZUCCHINI + SHALLOT pasta•
-so so creamy and delicious. But truly what makes this dish is what it’s topped with. The caramelized shallots, golden zucchini, squash, burrata + fresh basil... WOW!

HERE IS WHAT TO DO:
-boil pasta in salted water and set aside 1 cup of pasta water
-to a pan add in 2 TBSP butter and 1 sliced shallot. A quick sauté then add in 1/2 of a zucchini + 1/2 of a squash (sliced) with some salt and black pepper and let that become nice and golden. Set it aside
-back into that same pan add in another 2 TBSP butter, 1 tsp minced garlic, the remainder of your zucchini and squash (the 2 other halves), and your spices
-spices: 1 tsp salt, 1/2 tsp black pepper, 1 TBSP onion powder, 1 TBSP garlic powder. Mix until the vegetables have softened just a bit.
-add in the zest of 1 lemon + 1/2 cup of parmesan cheese + 2 cups of heavy cream.
-on medium to low heat allow this to thicken. Once thickened, optional to add in some red crushed pepper flakes and taste test for more salt if needed.
-add the pasta into the sauce with a little more parmesan cheese (the amount is up to you) + pasta water.
-keep on low heat until the sauce coats the pasta
SERVE:
place the pasta in a dish, top with the golden zucchini, squash, lay out the burrata, top it with the caramelized shallots + fresh basil.
