Feeling peachy 🍑 might make some plant based French toast with really good eggs. Recipe by @beetsbybrooke. – French toast ingredients: 8 slices of sourdough (ideally stale) 2 tbsp sugar 1 tsp vanilla 1 tsp cinnamon 1 cup JUST Egg 1⁄2 cup nondairy milk Coconut oil Peach compote ingredients: 4 peaches, diced (fresh or frozen) 1 tbsp sugar 2 tbsp water 1 tbsp lemon juice 2 tsp cinnamon 1-2 tbsp maple syrup depending on your sweetness preference – JUST Egg French toast instructions: 1. Whisk together the JUST Egg, sugar, vanilla, cinnamon and milk in a wide and shallow dish. 2. Soak the bread slices in the custard mixture for 15 to 30 minutes, flipping halfway through. 3. Heat a nonstick skillet to medium-low heat with a light coating of coconut oil or plant-based butter. 4. Remove each slice of soaked bread from the custard mixture and cook on the skillet for about 2 minutes on each side until browned. Peach compote instructions: 1. Place all ingredients, except for the maple syrup, in a sauce pan and set stove to medium-low heat. 2. Stir continuously and bring to a boil. 3. Reduce to a simmer and let cook for about 5 minutes until you get a sauce with partially broken down fruit – cook longer if you want more of a liquidy sauce. 4.
