SQUASH + ZUCCHINI STEW• -when there’s left over zucchini and squash- it becomes a quick stew around here. especially these little baby summer versions- how cute?! Electric pressure cooker always to the rescue with me. It’s truly the best time save. While the meat is doing its thing in there- i work on my vegetable and by the time I’m done with it... the meat is done too! Here’s how to make this super easy dish: MEAT: -into the electric pressure cooker add in 2 small onions (chopped, sliced, or in my case puréed) -add in meat of choice (i used filet mignon. 18 small cubes) -oil -add in spices: 1 TBSP tomato bouillon, 1 1/2 TBSP ground coriander, 1 tsp ground cumin, 1 tsp turmeric, 1 tsp black pepper, salt to taste, 1 TBSP minced garlic -2 cups of water. Mix -pressure cook for 20 minutes SQUASH + ZUCCHINI: -cut to desired size -in a pot add some oil and 1tsp minced garlic. -add vegetables -spices: 1tsp onion powder, sprinkle of salt and black pepper. Mix -add 2 puréed tomatoes. On medium to low heat. close lid and allow to soften half way. -by the time this happens the meat should be done, add it into the same pot. Raise heat to medium high and allow the extra liquid to evaporate and oil rise to the top. -add peppers if you’d like.
