An ingredient often discarded despite imparting a lot of aromas.⁠ ⁠ We landed specifically on mandarin and lemon leaves – their refreshing bright acidity and light fruity notes hit the spot.⁠ ⁠ To create contrast, coffee leaves brought darker tones and leathery length.⁠ ⁠ Together, we had an elegant base to work from; it was the start of a conversation and interplay between light and dark notes. It was the start of what became Symphony 6.
