Leeks with Carrot Top Pesto - Another Day in Paradise Ingredients 4-6 leeks - trimmed, cleaned and 2-3 outer layers removed Carrot greens removed from 1 bundle of carrots (a generous handful) 50g pistachios - finely ground 50-75g parmesan - grated 1/2 cup extra virgin olive oil 2 tbsp butter 1/2 lemon juice and zest Sugar to taste Salt to taste Salt & pepper to taste You can make the pesto in a blender or mortar and pestle. I like the texture the mortar and pestle gives. Crush the nuts, then add the chopped carrots greens, olive oil and salt. Keep grinding until everything starts to blend - add the grated cheese and a little more oil - until smooth. Season with a little sugar - this helps with the bitterness of the greens and brings out the flavour of the pistachios. Finish with lemon juice and zest. Steam the leeks for 7-10 minutes (I do 10 as I prefer them on the softer side). Add the steamed leeks to a hot pan with a splash of oil. Season with salt and brown on both sides - turn down the heat and add the butter. Baste for 2-3 minutes. Top with the residual brown butter, black pepper and pesto. #leeks #carrottoppesto #fyp
