It's International #potatoday đŸ„” So we're making my favourite Hasselback Potatoes with Garlic Butter & Chives. This recipe is a show stopped at dinner parties. Full recipe below 👇⁠ ⁠ Ingredients:⁠ 2kg white washed potatoes⁠ 1⁄4 cup extra virgin olive oil⁠ ⁠ To serve:⁠ 60g butter, unsalted⁠ 2 garlic cloves, minced⁠ 1 bunch chives, finely sliced ⁠ ⁠ Method:⁠ Preheat the oven to 200°C or 390°F. Line a baking tray with baking paper. ⁠ ⁠ Use a small knife to make slices in the potatoes, stopping 0.5cm away from the bottom of the potatoes. The slices should be .25-.5cm apart. Place the potatoes cut side up on the lined baking tray. Drizzle with extra virgin olive oil and season with sea salt and black pepper. Bake in the preheated oven for 70-80 minutes, or until the potatoes are cooked through and golden on top. ⁠ ⁠ Whilst the potatoes are cooking, melt the butter in a small saucepan. Add the minced garlic, season with sea salt and black pepper. Stir and set aside to let the flavours infuse. ⁠ ⁠ Serve the potatoes on a platter and drizzle with the garlic butter. Garnish with chopped chives. ⁠ ⁠ Time to cook: 80⁠ Serves: 8-10⁠ ⁠ Notes:⁠ Slicing the potatoes takes a little bit of time but it is well worth it. Need some extra slicing tips?
