Full recipe below 👇⁠ ⁠ Ingredients:⁠ 2 cups almond meal⁠ 2 eggs⁠ 1⁄4 cup chia seeds⁠ 2 bananas, over ripe is best ⁠ 1⁄4 cup coconut oil, melted⁠ 1⁄4 cup almond milk, or milk of choice ⁠ 2 tbsp maple syrup, or stevia granules or honey⁠ 1 tsp cinnamon⁠ 1 tsp baking powder⁠ ⁠ For the topping:⁠ 2 tbsp hulled tahini⁠ 1 tsp cinnamon ⁠ ⁠ Method:⁠ Preheat the oven to 160°C or 320°F. Grease a muffin tin with olive oil or coconut spray or use muffin liners. ⁠ ⁠ In a blender, add all of the ingredients, except the tahini and 1 tsp cinnamon. Blitz until you’ve reached a smooth consistency.⁠ ⁠ Spoon the mixture into the muffin tray and bake for 35-40 minutes or until the muffins are golden and cooked through.⁠ Meanwhile, combine the tahini and cinnamon to make the cinnamon swirl. ⁠ ⁠ Once cooked, remove the muffins from the oven and drizzle each muffin with a swirl of the tahini cinnamon. ⁠ ⁠ Store in an airtight container for 3-4 days or the freezer for up to 2 months. ⁠ ⁠ Time to cook: 45 minutes ⁠ Makes: 6⁠ ⁠ #jshealth #jshealthrecipe #recipes
