Ingredients:
1 box Barilla Spaghetti
1 28 oz can peeled tomatoes
2 tsp capers, coarsely chopped
2 tbs parsley, chopped
3 anchovy fillets in oil
1⁄2 cup pitted black olives, chopped
3 cloves of garlic, peeled
Dried chilli pepper flakes, to taste
2 1⁄2 Tablespoons extra virgin olive oil
Salt, to taste
Directions
1. Rinse the capers in a sieve under running water to remove excess salt, then chop them coarsely.
2. Roughly chop the pitted olives as well as the parsley.
3. Place a pot of water on stove to boil (salt it when boiling).
4. Meanwhile, pour the olive oil, peeled whole garlic cloves & chilli pepper into a large pan. Add the anchovy fillets and capers. Brown over medium heat for 2 mins, stirring frequently, so the anchovies melt down. Be careful not to burn.
5. After aromatics are released, pour in the tomatoes, stir with a spoon, and cook tomatoes down for another 10 mins over medium heat.
6. Meanwhile, add the spaghetti to boiling water. Cook for 2 mins, then turn off the heat and add a lid. Cook spaghetti passively (with the lid on) for 8 minutes until al dente.
7. When the sauce is ready, remove the garlic cloves and add the olives. Add chopped parsley to the sauce.
8. Sauté for half a minute, just enough time to mix the flavors together.
9. Serve and Enjoy!
