Today we are at Château de La Soujeole to witness first hand the balance of the vine and its environment.
To witness Viticulture in harmony with nature is essential to the process of understanding how a vineyard in excellent health and in a preserved environment can produce these excellent wines from the south of France shine all over the world.
To top a great day we were treated to Cassoulet: a traditional South Western French dish once a simple farmhouse fare, but it has been elaborated into a rich and complex dish known the world over.
