Quick meal of the week and family fave - Spicy Chicken Tacos đŽ Weâve made ours super fresh and zesty, but if you like things hot - add your favourite hot sauce to this recipe for an extra punch! Full recipe below đâ

Ingredients:â
1/8 red cabbage, shreddedâ
1 carrot, gratedâ
small handful coriander leaves, finely choppedâ
1 tbsp apple cider vinegarâ
1 tbsp sweet paprikaâ
1 tsp ground cuminâ
1â2 tsp chilli flakesâ
2 tbsp extra virgin olive oilâ
1 clove garlic, mincedâ
300g chicken breast, dicedâ
6 corn tortillas, or tortillas of choiceâ

For the salsa:â
1â2 avocado, dicedâ
10 cherry tomatoes, finely dicedâ
1/8 red onion, finely dicedâ
1â2 lime, juicedâ

Method:â
To make the salsa, place all of the ingredients in a small bowl. Season with sea salt and black pepper and toss. â
â
To make the salad, combine the shredded cabbage, carrot, coriander leaves and apple cider vinegar in a bowl. â
â
To prepare the chicken, place the sweet paprika, cumin, chilli flakes, 1 tbsp olive oil and garlic in a mixing bowl. Season with sea salt and black pepper and stir until smooth. Add the diced chicken to the bowl and stir until the chicken is evenly coated. â
â
Heat the remaining olive oil in a large non-stick fry pan over a medium-high heat. Add the chicken to the pan and cook for 5 minutes or until cooked through. â
â
Whilst the chicken is cooking, prepare the tortillas as per the packet instructions. â
â
Fill each taco with the cabbage salad, cooked chicken and top with the salsa and an extra squeeze of lime! â

Time saving tips:â
đ Dice the chicken into small pieces so it cooks quickly.â
đ You can also use a pre-prepared slaw mix if short on time!â
đ The chicken can be replaced with fish or, for a vegan option, tofu, tempeh or black beans!â
