There's always the one that goes the extra mile at the holiday party, and this year it's @chefpriyanka’s sheet pan pineapple upside down pancakes. Make sure to have an audience for the big flip moment. Caramelized Pineapple: – 8 pineapple rings (fresh or canned work) – 8 maraschino cherries – 1/2 cup brown sugar, packed – 1/4 cup melted plant-based butter – pinch of cinnamon – splash of rum Batter: – 3 tbsp JUST Egg – 1 cup full-fat oat or soy milk, mixed with 1 tbsp lemon juice – 1 1/2 tbsp melted plant-based butter – 1/2 tsp vanilla extract – 1/2 tsp salt – 1 tsp baking powder – 1/2 tsp baking soda – 1 cup all purpose flour – 2 tbsp raw cane sugar – non-dairy whipped cream for serving (optional) 1. Pineapples: In a bowl, mix together brown sugar, butter, cinnamon and rum until combined. Pour mixture on a baking sheet and spread evenly. Place pineapples on a baking sheet and a maraschino cherry in between the center of each ring. 2. Dry ingredients: Whisk together flour, salt, baking powder, baking soda and sugar. 3. Wet ingredients: Whisk together JUST Egg, oat milk mixture, butter and vanilla extract. 4. Combine: Gently pour wet into dry while whisking into a thick batter. 5. Preheat oven at 425o F. Pour batter on top of prepared pineapples. Bake for about 15-20 minutes until lightly golden. Remove and allow to cool for 2 minutes. 6. Carefully flip the entire sheet pan upside down onto a large platter or cutting board.
