Raw Walnut Brownies with Choc Frosting đ¤ A healthy spin on the original, these brownies are just as rich and gooey, plus have a decadent chocolate frosting! They can be whipped up in a flash and are sure to impress. Full recipe below đâ
â
Ingredients:â
10 medjool dates, pittedâ
1â4 cup cacao powderâ
1 cup almondsâ
2 tbsp maple syrupâ
2 tbsp waterâ
1â2 cup walnuts, choppedâ
â
For the topping:â
50g dark chocolate, meltedâ
2 tbsp almond milk, cold, or milk of choiceâ
2 tbsp walnutsâ
â
Method:â
Line a small square baking tin (or loaf tin) with baking paper.â
â
Add the medjool dates to the bowl of a food processor and pulse until chopped. Add in the cacao powder, almonds, maple syrup, water and a pinch of sea salt. Process until the mixture forms a sticky dough. Add in the walnuts, and pulse a few times to incorporate them into the mixture. You want the walnuts to remain chunky to give the brownies some texture.â
â
Press the mixture into the lined baking tin and freeze for 1 hour, or until set.â
â
Once the brownies are set, make the chocolate frosting. Place the melted chocolate in a small bowl and whisk in the cold almond milk until smooth. Evenly spread the frosting on top of the brownies and then press the extra walnuts into the top.â
â
Slice into small squares and keep stored in an airtight container in the fridge for 1 week, or in the freezer for up to 1 month.â
â
Time to cook: 10 minutes, 1 hour freezer timeâ
Makes: 9-12â
