Half oatmeal, half chocolate chip, all delicious. INGREDIENTS – 1 cup unsalted, plant-based butter (at room temperature) – 1 cup brown sugar – 1 cup white sugar – 3⁄4 tsp baking soda – 1 tsp salt – 100 mL JUST Egg (at room temperature) – 1 tbsp vanilla extract – 2 cups all-purpose or gluten-free flour – 2 cups rolled oats – 1 1⁄2 cups chocolate chips INSTRUCTIONS 1. Preheat oven to 350°F (conventional) or 325°F (convection). 2. Let the butter and JUST Egg reach room temperature. 3. With a mixer, cream together the butter, brown sugar, white sugar, salt and baking soda until light and fluffy. Scrape the bowl and mix for another minute. 4. Add the JUST Egg and vanilla. Mix on medium until light, fluffy and even in texture. 5. Add flour and oats. Mix until just until incorporated. Fold in the chocolate chips. 6. Scoop 1⁄4 cup balls of dough onto a baking sheet. Bake for 10 to 13 minutes until the cookies are lightly browned on the bottoms and the centers are not too gooey. 7.
