Pumpkin Spice Chocolate Chip Sourdough Pancakes 🎃 inspired by the wonderful @theclevercarrot Ingredients 1 1/2 cups all purpose flour 2 tbsp. sugar 1/2 tsp. sea salt 2 tsp. pumpkin spice 2 tsp. baking powder 1 tsp. baking soda 1 cup sourdough starter 2 large eggs 1 cup milk, plus more if needed 3 tbsp. melted salted butter, plus more to coat the skillet Optional: chocolate chips whipped maple butter Combine all ingredients EXCEPT the baking powder and baking soda. Whisk until combined and let chill overnight. The next morning, when ready to cook, sift baking powder and baking soda over batter, and gently whisk to combine. Let sit for about 5 minutes to activate. Add milk as needed. The texture should be thick and bubbly. In a large skillet or griddle, heat to medium low and melt butter. Scoop about 1/3 cup of batter into pan. Add chocolate chips if desired. When bubbles start to appear on the surface, and the bottom is golden brown, flip and finish cooking on the other side. Repeat until all the batter is used up. I like to serve mine with a whipped maple butter. To make that, add 3-4 tablespoons of room temperature butter, and 1 tablespoon of maple syrup into a bowl and whip on high until combined. Scoop out and freeze until ready to use. Happy baking! 🎃
