Bone in will give you more flavor beef chuck roast arm roast short ribs beef cheeks brisket beef or lamb shank (osso buco) oxtail lamb neck pork shoulder 2. brown the meat season all sides of the meat generously with sea salt. put into a hot pan with your cooking fat of choice (butter, tallow, ghee, lard) until it gets a nice crust. 3. add onions & garlic remove meat from the pan and sauté onions and garlic, if using. 4. add bone broth add meat back to the pan of onions and garlic. add enough bone broth to cover the meat about half way. you could also use water. add any herbs or aromatics. 5. Bake cover the pot and bake the meat in the oven at 250 degrees Fahrenheit for 4-6 hours. Or for 8-10 hours in a slow cooker. The meat is done when its fork tender.
