What an incredible collaboration with @sausage_sensei from @brothertonsbbqpftx !!! A couple of months ago Bill invited me over to Texas for a sausage collab. I thought, “sure, I can play with Asian flavors. Let’s do it.” He said, “no, come up with a menu of composed dishes and we’ll put it in a tube!” 🤯 I thought he was crazy. Turns out, I’m almost just a nuts as him! 🤪 I still can’t believe we pulled off this menu of 5 sausage flights! If that isn’t a thing, I think it should be from now on! Thank you to our gracious hosts, @briskit_wispuhrer, @sausage_sensei and their amazing kickass FOH and BOH team. To those who drove far and wide to be here today, I can’t tell what an honor it is to feed you today! Two years ago I was tinkering in my backyard and today I’m in the Mecca of BBQ collaborating at a @texasmonthly top 50... AND feeding @bbqsnob!! The universe has a plan for me and I’m game.
