I’m taking you back to Honolulu, HI for one of my favorite restaurants on the island, @aburiya_ibushi.
They specialize in charcoal grilled “aburiyaki” cooking here, which essentially means flame-seared. 🔥
All of the meats are cooked on top of binchotans, which gives it a nice smokiness and slightly charred texture.
Some of our favorites were the chicken thighs marinated in shio-koji garlic sauce, house made potato salad (must order), crushed spicy cucumber, and beef curry w/ vegetables (special menu).
Chef Toru Ibushi opened his restaurant on March 18, 2020 - just two days before all O’ahu restaurants were ordered to close their dining rooms. On March 20th, he only had one customer the entire day and had to immediately furlough his staff.
He persevered through that difficult time by changing his menu and opening hours, and gained support from the surrounding locals. It’s incredibly amazing to see him thriving now and making a name for himself. And he’s a super nice guy!
There’s a reason @scrumphsus and I came here twice in three days and made this our last meal in Hawaii.
