I’m so excited to be cooking with @the.modestos for their last pop-up this season in Cortina Valley. We want to re-create a typical roadside piqueteadero, found on long stretches of road connecting larger cities throughout Colombia. These places usually have endless food options. Our menu will have hung roasted beef rib, smoked artesanal Colombian chorizo, papitas, grilled corn, maduros, arepitas and salsitas - like aji and smashed avocados.
