Spicy, chewy, savory and really good. @thekoreanvegan’s tteokbokki with ramyun noodles and JUST Egg Folded is sure to feed your soul and clear your sinuses though these chilly times. 🌶 Ingredients 8 oz Korean rice cakes (garaetteok) 1 JUST Egg Folded 2 tbsp sesame oil 1 tbsp extra virgin olive oil 1 carrot, sliced 1⁄2 zucchini, chopped 1⁄2 red bell pepper, julienned 1⁄2 green bell pepper, julienned 2 scallions, chopped 3 cloves garlic, minced 1 plant-based instant ramyun pack 2 tbsp gochugaru 1⁄4 cup gochujang 2 tbsp brown rice syrup (or maple syrup) 2 tbsp soy sauce salt & pepper Optional: 1⁄4 cup plant-based cheese – Instructions 1. Add 1 tbsp sesame oil with some salt and pepper to a bowl of thawed rice cakes. Set aside. 2. In a large pot, add 1 tbsp sesame oil + 1 tbsp extra virgin olive oil over medium high heat. When oil shimmers, add scallions and garlic and cook for about 2 mins. 3. Add remaining veggies and cook for 2 mins. 4. Add ramyun broth packet, gochugaru, gochujang, and sweetener and stir until everything is evenly coated. 5. Deglaze with soy sauce and then add 2 cups of water. Bring to boil and then add ramen noodles. 6. Cook for about 3 to 4 minutes until noodles are cooked. Then add cut strips of JUST Egg Folded. 7.
