May all your ooey-gooey cardamom sticky bun dreams come true with @chefpriyanka’s plant-based holiday recipe. Brioche dough: * 1 cup JUST Egg * 2 1/4 cup all purpose flour * 2 1/2 cup bread flour * 1 1/2 packets active dry yeast * 1/3 cup sugar * 1 tbsp kosher salt * 1/2 cup cold water * 1 cup + 6 tbsp unsalted plant-based butter, cut into cubes Sticky goo: * 3/4 unsalted plant-based butter * 1 1/2 cups light brown sugar packed * 1/3 cup plant-based honey substitute * 1/3 cup plant-based heavy cream or full-fat coconut cream * 1/3 cup water * pinch kosher salt Dough instructions: Using a stand mixer with a hook attachment, combine all ingredients except for butter until it's a flakey dough. Slowly add in butter, one piece at a time, until combined. Then, beat on high for 10 to 15 minutes until a shiny, stretchy dough forms. Place into a large bowl and cover with plastic. Place in fridge overnight or in freezer for up to two weeks. Goo instructions: Melt butter in a pot on stove over medium heat. Add in brown sugar and whisk until dissolved. Remove from heat and add all other ingredients. Whisk until thick and dissolved. Allow to cool completely. Filling: * 1/4 cup light brown sugar packed * 1/4 cup raw cane sugar * 1/2 tsp ground cinnamon * 1/2 tsp ground cardamom * 1 cup pecans - toasted, chopped Assembly: 1. Mix together sugars, cinnamon, cardamom and half of the pecans. Set aside. 2. Roll out half of the rested dough until 1/8 to 1/4 inch thick on a floured surface. Spread on filling mix and press in. Gently roll into a log and cut into 2-inch wide rolls. 3. In a 9x13 inch baking dish, pour in goo, reserving about 1/3 cup on the side. Add remaining pecans. Place in rolls face-down. Cover with plastic and set in warm place to rise for 2 to 4 hours. 4. Bake in middle rack in preheated 350o F oven for about 45 minutes until dark golden brown. Remove and rest for 2 to 5 minutes.
