I love a good noodle recipe INGREDIENTS: • 1 tsp whole Sichuan peppercorns • 8 oz (4 servings) spaghetti • 2 tbsp vegetable oil • 3 garlic cloves, minced • 1 tbsp minced ginger • 1 small onion diced • 4-8 dried chillies, roughly chopped • 1lb chicken thighs • 1⁄2 bunch of scallions • 2 tbsp roughly chopped roasted peanuts SAUCE • 1/2 cup chicken stock • 1⁄4 cup light soy sauce • 1 tbsp chinese black vinegar • 1 tbsp sugar • 2 tsp dark soy sauce • 1 tsp sesame oil • 2 tsp corn starch DIRECTIONS: 1) Toast the sichaun peppercorns in a pan and when the aromas are releasd, use a mortar and pestle and grind into a powder. 2) Combine ingredients for the sauce and set aside while noodles are boiling. 3) Heat the oil in a pan on high heat. Add the garlic, ginger and onion and fry for until onions are translucent. Then add in the chicken and dried chillies. Fry until chicken is completely cooked through. 4) Add the sauce and the cooked spaghetti. Keep tossing until sauce has darkened and thickened.
