Put in a lined springform pan, and form crust evenly. Lemon Cream Cheese Filling 40 ounces (5 packs 8 oz. each) cream cheese 4 extra large eggs 1 cup heavy cream Zest of 4 lemons 1 1/4 cups granulated sugar 1 teaspoon vanilla extract Pinch of salt Directions: Mixed all ingredients until smooth, and free of lumps. Pour over the graham cracker crust, and bake for 1 hour. Remove from oven, and let set for 2-3 hours. Italian Meringue 6 egg whites 1 teaspoon cream of tartar 1 cup granulated sugar 1/2 cup water Directions: Beat egg whites, and cream of tartar until soft peaks form. Heat sugar/water mixture over medium-high in a sauce pan until a temperature of 240 degrees Fahrenheit is reached. With the mixer on, slowly drizzle into egg white mixture. Use immediately. Enjoy!
