White Chocolate Mousse with Raspberry Coulis 😋 For the Mousse Ingredients: 3 egg yolks 1 cup + 1/2 cup heavy whipping cream 8 ounces white chocolate, chopped into small pieces 1/2 cup sugar 1 teaspoon vanilla extract 1/8 teaspoon salt *Prepare first Raspberry Coulis Ingredients: 1 cup ripe raspberries 1/4 cup granulated sugar Directions: Place the raspberries and sugar in a small sauce pant. Cook over low heat for 15 minutes. Remove from the heat and let cool. For the Mousse Directions: Combine the egg yolks and sugar. Mix with a whisk until light and fluffy. Heat 1/2 cup of whipping cream in a sauce pan with the vanilla and salt. Temper the heated mixture into the egg/sugar mixture stirring constantly. Place this mixture over the white chocolate pieces and mix until smooth- let cool until it reaches room temperature. Whip 1 cup of heavy whipping cream, and gently fold into the chocolate mixture. Place in ramekins 1/2 way, add a portion of the raspberry sauce, then top with another portion of the mousse. Refrigerate for 1 hour. Remove and garnish with fresh raspberries and mint.
