Tiramisu Creme Brûlée 😋 For the Custard Ingredients: 3 cups heavy cream 1 vanilla bean split lengthwise (1 teaspoon extract may be substituted) 1/8 teaspoon salt 6 egg yolks 1/2 cup sugar Directions: Place the heavy cream, vanilla bean, and salt in a sauce pan and cook over low heat for 15 minutes, stirring ocassionally. Strain liquid into a bowl. Reserve. Put the egg yolks in a bowl. Add the sugar, and mix thoroughly. Temper the hot cream mixture into the egg/sugar mixture, and whisk until fully incorporated. For the Espresso Mixture Ingredients: 1/2 cup hot water 2 tablespoons good quality espresso powder 1/4 cup granulated sugar 1/4 cup liquor of your preference- bourbon, dark rum, brandy, coffee liqueur, almond liqueur Directions: Combine all ingredients and mix until completely dissolved. Dip ladyfinger, or cake in briefly. Place in ramekin, fill with custard. Place in a baking dish- add hot water until it reaches 2/3 of the way up the ramekins. Bake for 25 minutes or until set. Let cool in fridge for 2 hours. Top with fresh cream, and dust with cocoa powder. Garnish with fresh berries.
