EGGS MIMOSA PASTA SALAD You may have seen "eggs mimosa" and asparagus on a menu before. It's essentially pillowy grated hardboiled eggs. I've deconstructed (but streamlined!) this concept into a pasta salad so you get that egg-y goodness without the addition of mayo. Which in a pasta salad, is just a bridge too far for me. The eggs and asparagus get cooked in the same pot as the pasta, so you are hot to go with just one thing to clean. And then it's finished off with a lemon vinaigrette and piles of fresh herbs.
