This life advice from @lahbco is best paired with this colorful and delicious Taiwanese scallion pancake recipe using JUST Egg. Scallion Pancake Dough - 2 cups flour - 1/2 tsp salt - 3/4 cup boiling water Filling - 1/3 cup all-purpose flour - 1/4 cup olive oil - 1 tbsp za’atar (not traditional & optional) - 3/4 teaspoon salt - 8 to 10 scallions, chopped Soft-Scrambled Eggs - 6 tbsp JUST Egg - 1 tbsp plant-based butter - pinch of sea salt/pepper Zesty Greens - 1/2 cup roughly chopped kale - 1/4 red onion, thinly sliced - juice of 1 lemon - drizzle of pomegranate molasses, optional Seared Chestnut Mushrooms - 4oz mushrooms - 1 tablespoon olive oil - salt/pepper to taste Process: 1. Combine flour and salt in a bowl. Slowly stir in hot water using a fork or chopsticks (1/4 cup at a time). Dough will be flakey to start. Knead dough with hands. Add a little more water if dry flour is remaining. Knead for 5 mins until smooth (some imperfections in the dough are okay). Cover the dough and let rest for 30 mins. 2. Combine flour, olive oil, salt and za’atar. Slice scallions and set aside. 3. After dough has rested, knead again until smooth. Cut dough into 6 even pieces and form into smooth balls. Work with one ball at a time, covering the rest so they don’t dry out. Roll each ball into a thin-ish rectangle (about 6”x10”). Brush some of the flour-oil mixture onto most of the dough (avoiding the edges). Sprinkle 2 tbsp scallions on top. Roll the dough from one side until you form a long tube. Pinch the edges then twist into a tight swirl, tucking the end into the back center of the swirl. 4. Flatten swirled dough gently, then roll out into an 8” circle. Heat 2 tbsp oil over medium heat in a non-stick skillet. Slip pancake into oil carefully and fry on each side until golden, about 2-3 mins per side. 5. Place the remaining pancakes between paper towels or parchment paper. To store, wrap pancakes with plastic wrap and keep in fridge for up to 4 days. 6. Serve with scrambled JUST Egg, sautéed greens, ajvar (red pepper spread), mushrooms, avocado, pickled onions and douse in hot sauce. #JUSTEgg #plantbased #egg #breakfastideas #fyp
