Hi, it's me again with another delicious way to put vegetables in your (or your kids) oatmeal! This Carrot Cake Baked Steel Cut Oats is one of my favorite recipes from CARBIVORE cookbook (see page 96 in the oats chapter!). Because steel cut oats take longer for your body to break down, they tend to be the best option for your blood sugar. The one downside is that they also take longer to cook. I’d argue that the pro column far outweighs this one gripe, especially when there are hands-off ways to prepare them like, say, in the oven. This oatmeal is a fantastic dump-and-stir recipe inspired by a beloved cake. Some (lie my husband) might say THE MOST beloved cake. Even though it is a slightly sweet breakfast, you get the added blood sugar benefit of vegetables in your bowl, in addition to walnuts and cinnamon. It’s perfect to make for the week ahead or as part of a brunch spread. Like my Green Baked Oatmeal, I usually make a batch of this, cut it into squares, and freeze it for future breakfasts.
