💥EPIC💥Stuffed Peppers 🫑 🌶️ *Pre-heat oven to 350-degrees Ingredients: 4-6 large peppers For the tomato sauce: 2 cans, 28 ounces each, San Marzano tomatoes 3 tablespoons unsalted butter 3 tablespoons extra virgin olive oil 1 cup diced sweet onion 1/4 cup minced garlic 1 teaspoon red pepper flakes 1/4 cup chiffonade of basil 1/4 cup fresh chopped parsley Salt and pepper to taste Directions. Place the butter and olive in a sauté pan over medium heat. Add the onions, garlic, pepper flakes, and a dash of salt and pepper. Cook until caramelized, approximately 15 minutes. Place the tomatoes in a large bowl and crush- add to the onion/garlic mixture in the sauté pan, and cook for 10 minutes. Add the fresh basil and parsley- cook for an additional 5 minutes. Add salt an pepper to taste. For the filling: 2 pounds 80/20 ground beef 3 large eggs 2 cups cooked and cooled rice 2 cup Italian seasoned Panko bread crumbs 1 cup shredded provolone or mozzarella 1 cup fresh grated parmesan-reggiano 1/4 cup whole milk 1/4 cup chicken stock 1 cup caramelized chopped sweet onion 1/2 cup sautéed chopped fresh garlic 1/2 cup fresh chopped parsley Salt and pepper to taste Directions: Place all of the above ingredients in a large bowl and mix until fully incorporated. Ladle a portion of the tomato sauce in an oven-safe casserole dish. Stuff the peppers with the meat and rice filling and place in the casserole dish. Top with tomato sauce, and place in the oven @350-degrees for 1 hour. Remove from the oven- add additional cheese, sauce and fresh chopped parsley.
