Blackened Cajun Salmon with Crab, Bacon and Sweet Pepper Cream Sauce 💥 *pre-heat the oven to 350-degrees Serves 2 2 pieces of salmon, 6-8 ounces each Spice mixture- 1 tablespoon each of cayenne, garlic powder, onion powder, cumin, paprika, fresh cracked black pepper, turmeric, Kosher or sea salt 3 tablespoon extra virgin olive oil 3 tablespoon unsalted butter Directions: Mix together spice mixture- seat half aside Coat the salmon with the blackening mixture- add the olive oil and butter to a sauté pan over medium-high heat and sear on both sides- place the salmon on a rack and bake at 350-degrees for 12 minutes. For the Sauce: Ingredients: 2 tablespoons extra virgin olive oil 4 tablespoons unsalted butter 1/4 cup minced garlic 1/4 cup minced shallots 1 cup diced sweet onions 2 cups diced red, yellow and orange peppers 1 cup diced and de-seeded jalapeño peppers 2 cups heavy cream 1 cup chopped bacon 2 cups jumbo-lump crabmeat 1 tablespoon of the blackening mixture Salt and pepper to taste Directions: Place the olive oil and butter in a sauce pan over medium heat. Add the garlic, shallots and onions, and cook until caramelized- approximately 10 minutes. Add the peppers and cook for 5 minutes. Add the cream, bacon, lemon zest, 1 tablespoon of the seasoning mix and salt and pepper to taste. Lastly, place the jumbo-lump crabmeat and chopped parsley in the sauce- mix until coated. Place the sauce over the fish and serve immediately.
