Turkish Red Lentil Soup (mercimek çorbası) Follow @makedelicioushappen for more Ramadan ideas!🌙 1/4 cup olive oil 1 carrot, finely diced 1 onion, finely diced 3 garlic cloves, crushed 2 tbsp tomato paste 1 tbsp red pepper paste 1/2 tsp Aleppo pepper 1/2 tbsp dried mint 1 tsp ground cumin 1 tsp black pepper 1.5 cups red lentils, washed and rinsed 6 cups of water (or more as needed) 1 tbsp chicken bouillon paste, or cube (optional, you can keep it vegan) Salt to taste Drizzle 3 tbsp unsalted butter 1/2 tbsp Aleppo pepper 🔸Wash red lentils in hot water until the water is clear. Drain well. 🔸In a pot (or you can use an instant pot), heat up oil and sauté carrot and onion for a few mins on medium high heat until golden 🔸 Add garlic, tomato paste, red pepper paste, Aleppo pepper, dried mint, cumin, and black pepper. Sauté everything for 2-3 mins. 🔸Add strained lentils and toast with everything else for a few mins. Pour water and add bouillon paste if using. 🔸For Stovetop: Let it come to a boil on high heat. When it boils, turn down to low heat and cover with a lid and cook on medium low heat for 20 mins 🔸For IP: place lid on and make sure it is on sealing. Pressure cook for 10 mins. 🔸Add extra water if needed at this point and blend. Add salt to taste. Serve with lemon juice, and Aleppo butter drizzle. 🔸Aleppo butter drizzle: melt butter on medium low heat and add Aleppo pepper flakes and let it toast for 1-2 minutes.
