Peanut Tofu Lettuce Cups 🥜🥬 🫑 - crunch is such a compulsory sensation to me when I’m developing a recipe, and boy did these fulfil the crunch factor😍A lovely light lunch or dinner recipe that’ll feed 2❤️ ▪️INGREDIENTS ▫️For the tofu 1 block (approx 225g) extra firm tofu (I used smoked) - cut into strips 1 tablespoon soy sauce 1 1/2 tablespoons sesame oil 1/2 teaspoon garlic granules ▫️For the peanut sauce 2 tablespoons smooth peanut butter 1 tablespoon soy sauce 1/2 teaspoon garlic granules 4 tablespoons oat milk ▫️For the rest 2 heads of romaine lettuce or lettuce of choice (end chopped off and leaves rinsed) 1/2 red pepper (thinly sliced) 50g red cabbage (finely shredded) 1/3 cucumber (thinly sliced) 1/2 avocado (thinly sliced) 2 spring onion (thinly sliced) 1 tablespoon crushed peanuts ▪️METHOD 1. Begin by heating a large pan on a medium heat. 2. Add the soy sauce, sesame oil and garlic granules to the pan. Combine then add the tofu strips and coat them evenly while they cook. Cook for a couple of minutes on each side. 3. Meanwhile prepare the peanut sauce by combining all of the ingredients. Add water to loosen to desired sauce consistency. 4. Wash your lettuce leaves and carefully shake dry. Load your with strips of pepper, red cabbage, cucumber and avocado. 5. Add the tofu strips once cooked then drizzle over the peanut sauce. 6. Top with sliced spring onion and crushed peanuts. Wrap up and enjoy.
