Toss until thoroughly mixed. Place the flour, corn starch, baking soda, baking powder, and a pinch of salt and pepper in a bowl- whisk to incorporate. Add 1/2 cup of this mixture to the chicken wings. Toss, cover and refrigerate for 1 hour. Remove the wings from the fridge. Dip the wings in the remaining dry mixture, then fry in 350-degree oil for 10-12 minutes or until golden brown, and 165-degrees internally. For the Sauce Ingredients: 1 cup unsalted butter 1/2 cup minced garlic 1 tablespoon red pepper flakes Zest of 1 lemon 1 tablespoon fresh cracked black pepper 1 teaspoon Kosher or sea salt 1 cup fresh grated parmesan cheese 1/2 cup chopped fresh parsley Directions: Melt the butter in a sauce pan. Add the garlic, red pepper flakes, lemon zest, salt and fresh cracked black pepper. Cook for 5-7 minutes, or until lightly caramelized. Place the cooked wings in a large bowl and cover with the garlic sauce. Add the fresh grated parmesan cheese, chopped parsley, and season with salt and pepper. Serve immediately.
