Cheesy Ancho Queso Sausage and Pasta Looking for an easy weeknight dish? It's a great one to have in your recipe arsenal! 🙌🏻 WHAT YOU NEED: 🧀 12 ounces elbow pasta (we used @eatgoodwheat), 3 tbsp unsalted butter, 3 tbsp flour, 1 tsp sweet paprika, 1/2 tsp onion powder, 1/4 tsp garlic powder, 24 ounces evaporated milk, 2 cups shredded cheddar cheese plus about 1/4 cup more for topping, 1/4 cup parmesan cheese, 1 package (4 links) Gilbert's Ancho Queso Chicken Sausages, 1/4 cup panko breadcrumbs, 2 tbsp butter (melted), and chopped chives as desired HOW YOU MAKE IT: 🧀 Start off by pre-heating your oven to 375 degrees. 🧀 Cook elbows according to package directions. Drain and set aside. 🧀 While pasta cooks, coin sausage links and then sauté in pan over medium heat for a couple of minutes, until slightly browned. Remove from heat and set aside. 🧀 In a large pot, melt butter. Then whisk in: flour, paprika, onion and garlic powders. Cook for 1- 2 min. 🧀 Next, whisk in milk, a little at a time. Cook until sauce begins to thicken. Then, remove from heat. 🧀 Stir in only 2 cups cheddar cheese as well as parmesan. 🧀 Add in pasta and stir to combine. Then add in sausage coins and again, stir to coat. 🧀 Transfer macaroni mixture to a pan (we used a 9.5 x 9.5 square) and sprinkle with remaining 1/4 cup shredded cheddar cheese. Set aside. 🧀 Combine breadcrumbs and melted butter. Then sprinkle coated breadcrumbs over top of the cheese. 🧀 Bake at 375 degrees for 20- 25 minutes. Once done, remove from oven. 🧀 Garnish with chives and enjoy!
