Tap the link in my story to find a location near you. #BarillaLove #BarillaUS Crispy pancetta, and peas pasta ✨1 box Barilla Love heart-shaped pasta ✨1 cup peas ✨1 cup grated Parmesan ✨4 ounces pancetta ✨2 cloves of garlic zested ✨8 Tablespoons of cold butter divided ✨1 teaspoon chicken bouillon ✨zest and juice of 1 lemon Cooking Instructions: 1. Bring a pot of water to a boil and salt it generously. Cook your pasta al dente and reserve at least 1 cup of pasta water. 2. Place your frozen peas in a strainer and submerge the strainer in the boiling pasta water for 30 seconds to cook them. Immediately transfer the peas to an ice bath to blanch and preserve their bright green color. 3. In a separate pan, cook your pancetta over medium heat until crispy. Remove the pancetta, leaving behind about 1 teaspoon of the pancetta oil. 4. Lower the heat to medium-low, then add 4 tablespoons of butter, your zested garlic and the zest of one lemon. Sauté for about a minute, or until the garlic is fragrant. 5. Add your cooked pasta to the butter mixture, then add the remaining cold butter, chicken bouillon, Parmesan cheese, and a splash of pasta water. Stir until a creamy sauce forms. If the sauce is too runny, add more Parmesan; if it’s too thick, add more pasta water to thin it out. 6. Stir in your cooked peas and finish with a squeeze of lemon juice. Taste for salt. 7. Serve the pasta topped with the crispy pancetta. Enjoy!
