Felt rubbish today. Sometimes it happens right?
I did all the right things but my midlife Mood was still low. So I took to the kitchen to make myself something to eat.
I love making salads. Summer salads, winter salads. As long as they are full of protein 😋
What’s one thing you need to do this week that will make your life better.

Here’s the recipe. Save for later x
2 chicken breast, broken into small pieces
2 handfuls of cos lettuce chopped
1/2 cucumber chopped
4 spring onions chopped
I handful of watermelon chopped
1/2 head broccoli broken into bitesized pieces ( mines raw, cook it if you like)
1/2 red pepper finely chopped
Handful each of mint & pinenuts
Dressing - Blitz together
1cm piece of ginger
1/4 Clove of garlic
2tsp Dijon mustard
1 tbsp maple syrup
4 tbsp extra virgin olive oil
Juice of 1 lemon
