This Lemon Tiramisu is the ultimate fresh, bright, and dreamy no-bake dessert! ☀️ Layers of lemon-soaked ladyfingers, whipped mascarpone, and homemade lemon curd—absolute perfection for spring & summer. 💛 🍋 Ingredients: Lemon Curd: 4 egg yolks 2⁄3 cup granulated sugar 1 Tbsp lemon zest 1⁄3 cup fresh lemon juice (or limoncello) Pinch of salt 6 Tbsp unsalted butter, room temp Lemon Syrup: 3⁄4 cup fresh lemon juice 1 cup water 1⁄2 cup sugar 1⁄4 cup limoncello (optional) Whipped Mascarpone: 8 oz mascarpone cheese, room temp 1 Tbsp lemon zest 1 1⁄2 cups heavy whipping cream To Assemble: 1 package ladyfingers (about 24) White chocolate, grated (optional) ✨ Instructions: 1️⃣ Make lemon curd: Whisk egg yolks, sugar, lemon zest, juice, and salt over simmering water. Cook 7-10 min until thickened. Remove from heat, stir in butter, and cool. 2️⃣ Make lemon syrup: Boil lemon juice, water, and sugar for 5 min. Cool, then stir in limoncello if using. 3️⃣ Whip mascarpone: Beat mascarpone, lemon zest, and cream until stiff peaks form. 4️⃣ Assemble: Quickly dip ladyfingers in syrup and layer in an 8x8 dish. Spread half the mascarpone, then lemon curd. Repeat layers. Top with remaining mascarpone. 5️⃣ Chill for at least 2 hours (or overnight!).
