Pappardelle with Italian sausage and Parmigiano sauce
1box Barilla Pappardelle
2tbs Olive oil
1small onion, chopped
400gr Italian sausage, mild, casing off
1/2cup dry white wine
20oz tomato “passata”
2cup beef broth
TTsalt and black pepper
2tbs butter
1⁄2cup Parmigiano cheese, grated
Place a pot of water to boil. Meanwhile In a skillet sauté onion with olive oil until translucent, about five minutes over medium heat. Add sausage and brown well over medium high heat, about ten minutes. Stir in wine and reduce well. Add tomatoes and one broth, bring to boil and season with salt and pepper, simmer for 20 minutes or until sauce is perfectly reduced. Meanwhile cook pasta according to direction.
