Sharing a special family recipe I make every Friday night! Instructions: 1. Gently pound each cutlet to make it thin 2. In a large plate, combine breadcrumbs, coarse panko. Add spices and throughly combine the mixture. 3. Whisk eggs and drop pieces of chicken in egg mixture 4. Coat both sides of the cutlet with breadcrumbs. 5. Heat large non-stick pan over medium heat, coat pan with vegetable oil and wait till the oil simmers. 6. Add cutlets to the pan and cook for 4 to 5 minutes per side or until crispy and golden. 7. Let cool over some bounty until room temp and then place in fridge for an hour (or more). 8. Re-heat in the oven at 325° for 45 minutes before serving to make super crispy! Enjoy with some spreads at dinner and even yummier the next day in a sandwich! #cooking #familymeals
