Salmon Bowls!! • Salmon 1 lb skinless salmon, cut into bite sized pieces 1/4 cup coconut aminos 1 tbsp rice vinegar 1 tsp honey 2 cloves garlic, minced 1 tbsp ginger paste or grated ginger 1-2 tsp sriracha, depending on spice preference •Carrot Salad -5-6 shaved carrots -1 tbsp coconut aminos (or soy sauce) - couple big pinches of salt - squeeze of 1/2 lemon - 2 tsp rice vinegar - 2 tsp maple syrup Sesame seeds to top Cucumber salad - same recipe as carrot salad, but with cucumbers • Sauce 2 tbsp plain Greek yogurt or mayo 2 tsp sriracha 1/2 tsp rice vinegar Combine salmon and all marinade ingredients in a mixing bowl and marinate salmon for at least 15 minutes. Place salmon pieces on a greased air fryer basket. Air fry salmon at 400°F for 6 mins. Assemble bowls with rice, salmon, pickled cucumbers, carrot salsd, avocado. Top with sesame seeds and a drizzle of the sriracha sauce. Enjoy!!
