Good veggies and protein make a GOOD salad- but a good dressing makes a GREAT salad.
Chicken salad with a tahini dressing
Serves 1
1/2 chicken breasts
1 handful of broccoli , in bite size pieces
1 handful of red cabbage, sliced
1 handful of cooked peas
1 handful of chopped spring onion
1 handful of spiralized sweet potato
A few mint leaves
Dressing
3 tbsp light tahini
1 tbsp olive oil (optional)
Juice of I lemon
Salt and pepper
1/2 clove of garlic
Blitz dressing ingredients together add
Enough water to make it easy to pour
(This dressing made enough for more than 1 salad)
