Super Crispy Oyster Mushrooms over Labneh with Herbs, Chili Crunch & Poached Egg 🥹❤️.
Ingredients:
•2-3 cups oyster mushrooms (yields 2 servings).
•2 eggs (poached).
•1 cup labneh.
•Chili crunch or salsa macha to taste (I used momofuku’s chili crunch but I have a recipe for salsa macha).
•1/2 cup flour (unbleached, I love King Arthur or Einkorn by Jovial).
•1/2 cup cornmeal.
•1.5 tbsp smoked paprika.
•2 tsp chipotle or guajillo powder.
•1.5 tsp mexican oregano.
•seasoned salt to taste.
•flaky sea salt.
•fresh dill and chives to taste.
•avocado oil.
Directions:
1.- Separate the mushrooms so they’re individual.
2.- preheat oil in a pan, you need about 1 inch until 350 F or until the back of your spoon is bubbling.
3.- combine flour, seasonings and corn meal.
4.- add some avocado oil spray to the mushrooms and coat in the flour mixture completely.
5.- fry until golden brown, it’ll be about 2-3 min max.
6.- divide the labneh on two plates, top with the mushrooms, chili crunch, fresh herbs, flaky salt and egg.
